Competency Checks

I'm just starting in Point of Care but I wondered how everyone handles competency checks.  I've created online powerpoints with tests at the end for one method.  Do I need to individually check off each individual and document their competency as well for a second verification?  What forms do you use to show inspectors?  A general form listing all tests or a list of steps for each test?
